Ingredients (servings 4-6):
- 1 lb Calamari, cooked and cleaned; do not overcook calamari, it will be tough
- 4 cloves minced garlic
- 2 cups shaved fennel (shave into strips with a cheese grater)
- 8 Tblsp Sadaf grapeseed oil
- 4 Tblsp fresh squeezed lemon
- 5 Tblsp fresh minced parsley
- Kosher salt to taste
Cut calamarl Into chunks. Mix all ingredients in bowl, add salt to taste. Best if made ahead and stored in refrigerator overnight.
Serve cold as an appetizer side dish or salad!
