Sabzi Polo

Ingredients (servings 4-6):


Empty the contents of the can into a bowl of luke warm water. soak for 10 minutes and drain. Bring 8 cups of water to a boil in a large pot. Add rice and salt to the water and boil for about 10 minutes stirring once or twice, drain and rinse with cold water. Heat oil and 1/3 cup of water along with saffron in a non-stick pan and fill it with alternate layers of rice and herbs starting with rice. Pour 1/2 cup of melted butter (optional) and 1/4 cup of water over the mixture, cover tightly with lid. Steam over medium low heat for 30 to 45 minutes. Serve with fish or poultry.

    The dry vegetable can be deposited into the rice while it is boiling. There is no need for soaking the vegetable ahead of time and alternating with the rice in the pot. This technique gives you a homogeneous mixture of the rice and vegetable.
