Ingredients: (Serves 4)
- 6 Egg Yolks
- 24 Packaged Ladyfingers Cookies
- 3 tbs Sadaf Brown Sugar
- 1 container Sadaf Mascarpone Cheese
- 1 ½ c Cooled Strong Espresso
- 2 tsp Dark Rum
- 3 tbs Cocoa Powder
In a large bowl add egg yolks and sugar. Beat using an electric mixer with whisk attachment until thickened, about 5 minutes. Add the mascarpone cheese and beat until smooth. Add 1 tablespoon of espresso and mix until thoroughly combined.
In a small shallow dish, pour in the rest of the espresso and rum. Dip each ladyfinger into espresso for only about 5 seconds to avoid it falling apart. Then, place the soaked ladyfingers on the bottom of a rectangular baking dish. Spread half the mascarpone over the ladyfingers being gentle not to break them. Add another layer of the ladyfingers soaked in espresso and run, and top with remaining mascarpone mixture. Sprinkle coco powder over the top until fully covered, cover with plastic wrap refrigerate for at least 2 hours and up to about 8 hours.
