Vegetable Stuffed Mushrooms

Ingredients (servings 4): Savory vegetanan delight

  • 12 large mushrooms, washed and dried, stems reserved
  • 4 Tablespoons Sadaf Grapeseed Oil
  • 5 cups Assorted minced Vegetables/Herbs (spinach, green onion, celery, garlic, Italian parsley and reserved mushroom stems)
  • 1/2 teaspoon Kosher salt
  • 3 Tablespoons Egg BeatersĀ® or 2 egg white
  • 2 Tablespoons Seasoned bread crumbs
  • 1 Tablespoon parmesan cheese
  • gorgonzola cheese

Directions:
Preheat oven to 400 degrees. Heat 3 Tablespoons of Sadaf Grapeseed Oil in large skillet. Saute minced vegetables/herbs for 3-4 minutes until fragrant and the liquid from the vegetables evaporated. Remove from heat and add remaining ingredients except gorgonzola. Brush mushroom caps with remaining 1 Tablespoon oil and stuff with vegetable mixture. Top with gargonzola cheese and place in lightly oiled baking pan or cookie sheet and bake for 17-25 minutes or until mushrooms are tender and stuffing is golden brown.
Yield: 12 mushrooms
